Chef Nicholas focuses on using local produce in his cooking, and maintains relationships with many of the farmers at the Union Square Greenmarket and throughout the Hamptons, as well as with the finest food purveyors in New York City. He specializes in creating rich flavor profiles using clean ingredients, artfully translating this style to kosher, vegan, gluten-free, and other special diets upon request.
